Traditionally the Pocket and Butcher Knives are used by the lower end of the market for whom a knive is a neccessity. The knives are used for everything not just in the Kitchen and this is the reason they have Carbon Steel blades which are much stronger than Stainless Steel and achieves a far better cutting edge, which lasts much longer.
